TASTE THE LOVE
Super Sweet Potatoes
Great for a crowd! Serves 8-10
4 large sweet potatoes, peeled and cut into large bite-sized pieces
1/3 c. Santa Jam
1 ½ t. kosher salt
¼ t. freshly ground pepper
Preheat oven to 425 degrees. Put sweet potato pieces in a large bowl. Microwave Santa Jam in a microwave-safe dish for 20 seconds. Whisk in salt and pepper. Pour over sweet potatoes and toss to coat. Using a slotted spoon, scoop potatoes onto a large baking sheet coated with cooking spray. Bake 15 minutes, turn the potatoes, and bake another 10 minutes. Pierce potatoes to make sure they are cooked through. Add additional salt and pepper to taste. Serve.
