Scallops with Tomato Glaze

10 large sea scallops
1/2 small bag of fresh spinach
2 Tbsp. extra virgin olive oil
1 Tbsp. minced garlic
2 T. bread crumbs
1 jar Emily G’s Tomato Jam

Preheat oven to 375. Drizzle baking dish with olive oil and place spinach in dish. Top with scallops and sprinkle with garlic, salt, and pepper. Baste scallops with Tomato Jam and bread crumbs. Bake about 20 minutes, or until scallops reach desired doneness.
