TASTE THE LOVE

Red Pepper Chicken
4 large breasts or similar size cuts of chicken
1 large onion diced
2 garlic cloves minced
1 sliced red bell pepper
1 jar of Emily G’s Roasted Red Pepper Jam
Place chicken in crock pot and salt and pepper to taste. Add all other ingredients. Cook on low heat for several hours until chicken reaches desired temperature. This can also be done in a covered skillet - brown chicken breasts in a skillet. Add onion, garlic, Roasted Red Pepper Jam, and 3/4 c. chicken broth (low sodium). Cover and simmer on low until done. Add more broth while its cooking if it becomes too dry. Great served with couscous.
