Great on fish, especially salmon
¼ c. Dijon
¼ c. fresh lemon juice
2 T. olive oil
1/3 c. Champagne Currant Jam
¼ c. chopped dill
salt and pepper to taste
Combine all ingredients in a food processor and pulse to combine. Pour into a bowl and refrigerate at least 1 hour before serving. Can be made one day before serving.
