
4 tilapia fillets (or any mild, white fish)
1/4 c. Parsley
1/4 c. bread crumbs
1/4 c. Olive Oil
2 garlic cloves minced
Salt and pepper to taste

Preheat oven to 400. Season fish with salt and pepper. Place fish in a baggie, and add parsley, bread crumbs, garlic and the olive oil and shake until well coated. Drizzle a little olive oil on a baking pan to prevent sticking or use non-stick spray, and place the fish in the pan. Bake about 15 minutes, depending on the thickness of the fillet and until it reaches desired temperature. Drizzle with tomato jam and serve.
