Fig and Pine Nut Breakfast Bread

1/3 c. vegetable oil
1/4 c. granulated white sugar
1/4 c. packed light brown sugar
1 T. lemon juice
1 jar Fig Pomegranate Jam
½ t. vanilla
1 beaten egg
1 1/2 c. flour
1 t. baking soda
½ t. baking powder
½ t. salt
1/3 c. toasted pine nuts, cooled

Preheat oven to 350. Mix the first 3 ingredients together until thoroughly combined. Add the next three ingredients and combine. Add the egg and combine. Stir in the vanilla. Combine the flour, baking soda, baking powder, and salt in another bowl - mix. Add the wet and dry ingredients, careful not to over-mix. Fold in pine nuts. Pour into a loaf pan sprayed with Crisco Baking Spray. Bake 30-40 minutes until done.
