TASTE THE LOVE

Fennel and Apple Slaw with Champagne Currant Dressing

1 Fennel Bulb Thinly sliced
A handful of Fennel Fronds finely chopped
2 Red Apples Thinly Sliced
1/2 Red Onion Thinly Sliced
1 celery chopped including leaves
2 T Emily G's Champagne Currant Jam
1 T Dijon Mustard
1 T Lemon Flavored Grape Seed Oil (I use Wild Tree or you can use fresh lemon juice and olive oil)
Salt and Pepper to taste

In a bowl toss the first 5 ingredients together in a bowl. Meanwhile, whisk the Champagne Currant Jam, Dijon Mustard, grape seed oil and salt and pepper to taste. Heat in the microwave for about 10 seconds to melt the jam and whisk together. Pour over slaw and mix togtether. Chill for at least an hour. Enjoy!
