Farmer’s Market Gazpacho with Tomato Jam
Use fresh veggies from your local market to get the best flavor.
This feeds a crowd!
 
4 very large tomatoes cut in half
5 tomatillos, skins peeled away
2 cloves of garlic
1 very large cucumber (or two small)
6 basil leaves
pinch fresh oregano
1 ½ t. sea salt
pinch ground black pepper
pinch cayenne
juice of one lime
½ c. Emily G’s Tomato Jam
 
Preheat oven to 375. Roast tomato halves, tomatillos, and garlic cloves for 25 minutes. Allow to cool. Using a food processor, puree the tomatoes. It should be about 4 cups for puree. Pour into a bowl. Puree the remaining ingredients. Combine with tomato puree. Refrigerate for 4 hours.
