Asian Beef Salad

4 cups chopped Romaine lettuce
2 cups cooked shredded beef
1 cup water chestnuts
2 scallions, chopped
1 half red onion thinly sliced
1/4 cup chopped fresh cilantro leaves
1 jar of Emily G’s Cranberry Jam
2 T Peanut Oil
1 T rice wine vinegar
2 tsp sesame oil
Salt and pepper to taste

Place lettuce in a large bowl (or divide onto individual dishes). Top lettuce with beef, water chestnuts, scallions, red onion and cilantro.
In a small bowl, whisk together ½ jar of Cranberry Jam, vinegar, peanut oil and sesame oil. Season with salt and pepper to taste. Pour mixture over salad and serve immediately.
